Spicy Shrimp and Grits

Spicy shrimp and grits gets an earthy upgrade with sautéed mushrooms and a vibrant kick from cayenne peppers. The shrimp are pan-seared until tender and tossed with mushrooms in a buttery, garlic-infused sauce, then layered over creamy, cheddar-rich grits. Ingredients
  

  • Shrimp and grits
  • Serving 3-4

21 oz shrimp

1 cup grits

32oz stock

11oz mushrooms

2 tbsp butter

60g cheddar

12 stalks of green onions

Garlic powder

Paprika

Cayenne

Salt and pepper

Instructions
 

Fill a large sauce pan with 32oz stock and heat until just starting to boiling.

    Add grits and gradually whisk to prevent lumps. Allow about 20 minutes of simmering for the grits to fully cook. Grits will be done when texture becomes smooth.

      Add butter, cheese, and seasonings

        Make sure shrimp is peeled, deveined and tails removed. Then place in bowl with small amount of oil and garlic powder paprika cayenne and salt and pepper

          In a pan add a small amount of oil and start sauteing mushrooms, once cooked add green onions until they start to wilt, then add shrimp and cook for about 3-5 minutes careful not to overcook shrimp.

            To plate pour grits on to serving plate and top with the shrimp mushroom and onion mixture
